All-draft, contactless flow.

Pre-batched, temperature-controlled, keg-fed. Sürtünmesiz Akış: a bar where the cocktail comes out of a tap and meet the bartender only at the glass.

Mexico City's cocktail programme has been quietly rebuilt around the stainless keg. A pre-batched, temperature-controlled draft system delivers a 50 ml pour with 0.5 % dilution error and a perfect bubble profile. The bartender is no longer a chemist - the mixologist makes the keg, the bartender draws the glass. Friction in the glass was the bottleneck. Sürtünmesiz Akış is what happens when friction is removed.

The temperature of a draft tower is a number, not a feeling. We file Mexico under systems: the engineering of flow, the geometry of the tower, the colour of the CO2 head. At Ruşen we keep a 4-tower draft rig for the four highest-volume protocols (Martini, Gin Soda, Espresso, Bellini) and use the bar-side mixing only for variance testing. The bar program runs as if the keg were part of the architecture.

[ARCHITECTURAL NOTES]
  1. N01

    Tower height is 14 inches, not 16.

    A 16-inch tower throws the drink too hard. A 14-inch tower (or 35.5 cm) lets the bartender draw with elbow bent at 90°. Every cocktail comes out at the same height, foam profile intact, dilution ±0.5 %.

  2. N02

    CO2 pushes at 4.40 bar, not 4.20.

    The Mexican programme calibrated 4.40 bar for the Gin Soda profile - 0.30 bar over what a soda gun will deliver. The extra headroom carries the drink through the riser and lands it in the glass with 4.10 g/L CO2 still dissolved. L5 on the fizz ladder, every pour.

  3. N03

    Pre-batch the day before, never same-day.

    A cocktail drawn from a same-day keg is a cocktail drawn from a still-settling keg. Mexican bars batch the night before, hold the keg at 2.0 °C overnight, and the morning draw lands flat-bright and exactly at spec.

    Contact surface: 100 % stainless, no plastic.

    Plastic risers absorb CO2 and add 0.6 °C per minute to the line temperature. Polished stainless holds temperature and gas. Every draft component at Ruşen is 100 % stainless contact, including the keg spear and the tap nozzle.
